Ti' Punch Antillaise
Recipe Ti' Punch

Rhum Agricole AOC 50% - 59% from Martinique / Guadeloupe / Marie Galante
Apply a few sprays of West Indian Extract Of Limes to the forearm.
Sprinkle the brown cane sugar in a small tumbler. Rather higher than wide the glass, but no long drink glass. Maximum half a coffee spoon of sugar, but at least, very importantly, 13 grains.
Use a sharp knife to cut a slice of the lime. We need more peel than meat. Squeeze the lime rondel over the glass (a few drops of lime juice are enough as a base) and put it into the glass. Using a small spoon (preferably made of wood) turn the lime piece clockwise in the glass. Slowly. Do not squeeze. The juice, fruit and sugar must become one. Watch the dancing whitecaps on the sea. Sniff your arm.
Add Rhum Agricole. Depending on the strength of the rhum about 6cl. A good thumb says the Antillais. Luck if you have thicker thumbs. I have office list hands.
Now place the glass in the open palm of your hand, grasp it with your fingers and swivel it slightly and consider the next move of the running Scrabble game. Sniff your arm. Sniff the glass.
Enjoy slowly. When the Ti' Punch is finished, fill the glass with mineral water and empty it once. Then repeat the procedure as desired.
Smell on the forearm at regular intervals. Best in combination with a sip of Ti' Punch. After about 45 minutes, apply another spray of West Indian Extract of Limes to the forearm.
Variations: Every little change in the number of drops of Lime Juice, grains of sugar, level of Rhum and Rhum brand change the character of Ti' Punch essentially. There is not THE right Ti' Punch. If you like it sweeter, add more sugar. If you like it chilled, add some ice cream (although a little bit frowned upon..)
It is also possible to use aged rhum, which changes the drink into a Ti'Punch Vieux. Please note that you should only take a 3 year old Rhum (Rhum Vieux VO / 3 ans). Older is too bad and too expensive for the Ti'Punch.

Guadeloupe: Longueteau Blanc 50%, Damoiseau Blanc 50%
The West Indian Extract of Limes is exactly what it is. Probably the purest and most "genuine" West Indian Lime olfactory extract I've ever smelled. Simply sensational and absolutely refreshing. Amazing. Forget about the shelf life. And mix yourself another Ti' Punch!
